a small appetizer dish (“otoshi”) is often served before you order.
This is not a complimentary service,
but part of a seating fee (cover charge)
that typically costs a few hundred yen.
The dish varies by restaurant,
and may include items such as edamame, simmered dishes,
or dressed vegetables.
It is enjoyed as a uniquely Japanese
“first bite” experience.
Since this custom is uncommon overseas,
some visitors may be surprised if they are not aware of it.
